Zier’s Prime Meats: A Tradition of Quality and Community

Zier’s Prime Meats and Poultry has been on my radar for a while, and I’m excited to share their story. Denise and Dave, the heart and soul of the shop, make you feel like family from the moment you step inside. That warmth is the essence of their store in Wilmette, which has been serving the community since October 19, 1985.

The building itself is steeped in history, dating back to the late 1880s or early 1890s when it was known as Biess’ Market in the village of Gross Point, IL. Over the years, it’s gone through many iterations—Wilmette Meat Market (1900s–1920s), Pearson’s IGA (1920s–1970s), and Ridge Avenue Butcher Shop (1971–1985)—before becoming Zier’s Prime Meats.

What sets Zier’s apart is their evolution from a local meat and grocery supplier to the premier butcher shop of Chicago’s North Shore. They offer USDA Prime beef, naturally raised pork, poultry, veal, lamb, and even wild game. Their shelves are stocked with gourmet sauces, soups, and spices that you can’t find anywhere else. One standout is their partnership with Creekstone Farms, the only U.S. company testing every head of cattle for BSE (mad cow disease), ensuring hormone- and antibiotic-free, grass-fed USDA Prime Beef.

Located in the charming village of Wilmette, which Denise and Dave call a “Midwestern Mayberry,” Zier’s owes much of its success to their loyal customers. “Our clientele are willing to pay for a superior product—but it must be the finest,” they told me. “Add outstanding customer service, and you have a recipe for success.”

As they step into the digital age, Zier’s continues to uphold their values, offering exceptional meats and house-made specialties both in-store and online.
