Shaw’s Crab House Celebrates 40 Years of Seafood, Tradition & Taste

The beloved Chicago seafood institution from Lettuce Entertain You Restaurants, Shaw’s Crab House, proudly marks its 40th anniversary this spring. Known for its unwavering commitment to sourcing the highest-quality seafood and oysters, Shaw’s has become a culinary cornerstone in River North and a nationally recognized name in seafood dining.

From Monday, April 7 through Friday, April 11, guests are invited to join the celebration at the River North location, featuring throwback menu items, live music, and special anniversary events that honor the restaurant’s rich legacy and dedication to culinary excellence.

Over the past four decades, Shaw’s has served more than 10 million oysters, welcomed over 8 million guests, and established itself as one of the premier seafood destinations in the country. A pioneer in sustainable sourcing, Shaw’s has cultivated lasting partnerships with fishermen, purveyors, and oyster farmers from coast to coast. Printed on the back of every menu since day one is the simple yet powerful motto that defines Shaw’s: “It’s the quality.”

One of Chicago’s very first oyster bars, Shaw’s was the vision of Lettuce founder Rich Melman, Executive Chairman Kevin Brown, Managing Partner Steve LaHaie, and Executive Chef and Partner Yves Roubaud. Their shared philosophy—quality over trend and letting the product speak for itself—has built a legacy of timeless dishes and generations of loyal diners.

“When we set out to create Shaw’s, we knew the menu wouldn’t chase trends,” says Executive Chairman Kevin Brown. “Instead, we focused on quality, letting the seafood and oysters shine on their own. The menu has always drawn inspiration from the best seaports across the U.S.—Boston, New Orleans, the Florida Keys, San Francisco, and, of course, the Great Lakes.”
