With over 25 years of experience honing the vibrant regional flavors of Mexico from Oaxaca to Yucatan, Bryan Enyart is poised to infuse Leña Brava with an entirely Baja-inspired concept. Prepare to indulge in tantalizing creations like the Salsa Macha Ceviche, a culinary delight bursting with flavors, or savor the Crunchy Quesadilla, a sophisticated take on a classic dish filled with requeson atop a fire-toasted tlayuda. Dive into the depths of the ocean with the Grilled Seafood Platter, showcasing fire-roasted shrimp, scallops, P.E.I. mussels, and Maine lobster. And don’t miss out on the savory Steak Fritas, accompanied by a baja chimichurri and seasoned fries, each dish reflecting the diverse influences of the region.

Drawing inspiration from ingredients and techniques that have washed ashore over the past century, this fusion cuisine tantalizes the palate with notes of Asian and Mediterranean flavors, such as miso, lemongrass, olive oil, and chili oil, expertly prepared in the restaurant’s sprawling 25-foot live fire hearth.

Enyart shares his enthusiasm for his new role, stating, “I’ve been enamored with Leña since its inception, and I am honored to continue nurturing its distinct flame. Baja cuisine’s rich narrative has been a joy to bring to life in our wood-fired kitchen every day. Moreover, I’m thrilled to be back in a leadership role, guiding and supporting this exceptional team.”

With a wealth of experience as Owner and Chef at Logan Square’s beloved Dos Urban Cantina, alongside his wife Jennifer Jones, Enyart has earned acclaim for translating seasonal Midwestern ingredients into inspired Mexican dishes. His culinary journey includes invaluable stints at Chef Rick Bayless’ Frontera Grill and Topolobampo, where he garnered accolades from MICHELIN, the James Beard Foundation, Top Chef Masters, and beyond.

Valdes, recognizing Enyart’s talent and vision, remarks, “Brian’s passion for mentorship and culinary prowess make him the ideal leader to carry forward Leña Brava’s legacy. His dedication to fostering a vibrant team culture ensures that the restaurant remains a cornerstone of the West Loop’s dining scene for years to come.”

As Enyart spearheads the kitchen, his focus extends beyond culinary excellence to creating meaningful experiences for both guests and staff, as well as enhancing the synergy with sister restaurant Cruz Blanca Brewery next door. Through mentorship and collaboration, he endeavors to uphold Leña Brava’s status as an industry favorite and a cherished neighborhood destination.

With Enyart at the helm, Leña Brava embarks on an exciting new chapter, promising engaging events, creative collaborations, seasonal menu delights, and more.
